Strawberry Chicken Salad
1/2 cup poppy seed dressing
1/4 cup mayonnaise
3 cups chopped cooked chicken (about one pound)
2 celery stalks, chopped
1 pint fresh strawberries, sliced in half
1 avocado, cut into 1-inch cubes
1/2 small red onion, thinly sliced
1/2 cup slivered toasted almonds
1 (10-ounce) package mixed salad greens
In a large bowl, whisk together dressing and mayonnaise. Cover and chill for 15 minutes. Into the large bowl, add all the remaining ingredients except the mixed greens. Toss well to coat. To serve, place mixed greens on plate and top with chicken salad mixture. Serve immediately.
